    Impeccably managed, fine tannins, lively acidity and just the right level of dosage unite harmoniously on a finish of line, length and integrity completely unexpected at this price.

    Méthode traditionnelle, 72/28% pinot noir/chardonnay. Fourth release, with a low dosage (7g/L), disgorged in June, 2021. Complex floral and citrus aromas introduce this charmer with pastry and yeasty notes in support. With input from reserve wines – 2017 and ' 18 reserve chardonnay and pinot noir, aged in old barrels – the palate delves into mandarin, cumquat, nougat and toast, in harmony with a surge in tangy acidity.     They think the fruit is so good and so unique that Vasse Felix (who are behind Idee Fix) have a completely separate and dedicated team that exclusively makes the wines from this intriguing site. Now, if that is not a vote of confidence I don't know what is. Whatever they are doing and however they approach they are doing it right because this is some absolutely thrilling Ozzie sparkling. We love it!

    57.3/34.9/7.9% pinot noir/chardonnay/meunier. Méthode traditionnelle; 2016 base vintage, first disgorgement, hence '1601'; aged 4 years on lees; 3.5g/L dosage; Cuvée No 1601, disgorged Aug '20. The house blend of the great House of Arras is a vital barometer for Tasmanian sparkling. Ever more honed, chiselled and sophisticated, its dosage drives lower than ever with each passing release, now resolutely extra brut. The deep, characterful, long-aged mood of Arras is pronounced here, brimming with vanilla cream, toast and roast almonds. Crunchy Tasmanian lemon, grapefruit and red apple brings tension to a long finish. The bite of bitter phenolics inherent to the Arras style is pronounced, leaving the finish grainy and firm.     Jansz is part of the Hill Smith Family Vineyards (YALUMBA) and was one of the early sparkilng wine labels in Tasmania, stemming from a short lived relationship between Heemskerk and Louis Roederer. JAMES HALLIDAY\n\nNatalie Fryer is the winemaker here and for the Dalrymple wines. She is in Tasmanian to oversee the vintage. The grapes are crushed in Tasmania but the fermentation and finishing of all the wines is completed back in Anguston. PWS\n

    Eminence 'Cute Brut' Zero Dosage Rose NV
    The fruit for this was handpicked and gently whole bunch pressed, before being transferred to old French oak for fermentation. No yeast, enzyme or nutrient was added and the ferment was kept at around 15 degrees to preserve aromatics. After primary ferment, the barrels had a small sulphur addition before resting over winter on the yeast lees. 11 months later, we assembled a blend of 38% pinot noir (white base wine), 2% pinot noir red wine (for that lovely colour), 30% chardonnay and 30% pinot meunier. The chardonnay was a blend of vintages, but the pinots were 2019 base wine - so this wine must be labelled NV.  After fermenting again (creating the bubbles!) It was then aged on lees for 30 months before being disgorged with zero dosage.

    Bellebonne is relatively new in the fine wine scene and the wines are quickly gaining traction, and rightly so.
    Wine maker Nat Fryar created Bellebonne on the backs of making quality sparkling wine at Jansz for 20+ years.
    The 2020 vintage Rose is made from 100% pinot noir grapes from Tasmania and expresses delicately wound fruit of fresh strawberries, sour cherries and Turkish delight. There are some lovely background autolytic notes for the classical Champagne fans out there but have no fear - everything is thoughtfully and delicately in check.
    Perfect for Christmas Day lunch, picnic in the park or a treat on the couch after a long day..

    I know, I know. Every year I urge you to consider including this classic Australian wine style in your Christmas drinking schedule. And, look, here I am again, tempting you with the latest vintage of Seppelt Show Shiraz, first made at Great Western in the 1890s: deep purple foaming in the glass, full of rich, dark aromas of squishy bramble berries and sweet soy, bold and chocolatey and super satisfying in the mouth. Is there a better wine match for roast turkey and glazed ham? I don’t think so.  MAX ALLEN

    What a wonderful wine this is in the genre of sparkling red for Australia and generally as an iconic totem in Aus wine. I’ve been trying to buy a bunch of older releases of this wine from auction sites for fun, and when I am successful, pretty happy with myself.

    Liquorice and tar, first up, then the stewed plum, dried cranberry, cherry cola going on. It’s got bright flavours under the char and game meat qualities, tight, fine bubbles that feel a little looser than expected but still vigorous enough to lift things. Very savoury release, this one. Good tannin profile under the fizz and tart acidity too. It’s a pretty darn good release, this. Feels sophisticated in its way. MIKE BENNIE, www.winefront.com.au

    52.7/47.3% pinot noir/chardonnay. Approximately five years on lees and disgorged with 6.5 g/L dosage. A bright straw green. This is very fine on the nose with delicate aromas of apples, white peaches, freshly poached red fruits, brioche and a little hazelnut. The palate is equally refined, and this builds nicely with its gentle creaminess and fine bead before finishing taut and long. A refined Aussie sparkling. PHILIP RICH, Halliday Wine Companion

    New look for Oscar Hermann, aka Combes wines. This comes from a vineyard in St Andrews managed by Oscar et al, and farmed organically (not certified).

    Tension seems apt! Tightly wound, laser-like, precise and very refreshing. A steel rod of acidity in tart citrus fruits, compact bubbles, saline notes, some faint cornflake character. A little mute in perfume but this is a ripper of a summer fizz. MIKE BENNIE, The Wine Front
