    Unmistakably Cocchi in character, Vermouth di Torino is one of only two geographically protected AOC vermouths (the other being Chambery). This Storico Vermouth di Torino follows the regional tradition of using fine Moscato wine as its base, which is then infused with a secret recipe of local and exotic botanicals.

    This is a remarkably complex aperitif wine. On the nose you immediately find aromas of singed orange peel, vanilla and caramel. Over time, faint menthol notes develop into aromas reminiscent of dandelion and burdock. This vermouth is very full flavored, the palate immediately detecting a bitter, earthy character which is very well balanced against the sweeter notes of licorice, orange zest and sugar. A very bold, long finish, with the bitter/sweet balance staying with you to the end.

    Traditionally drunk on its own or over ice, this vermouth will also add another dimension when used as an ingredient in your classic cocktails.

    Cocchi Americano means much more to Asti than a simple wine made with the infusion of herbs and spices. An aperitif par excellence. Cocchi's is widely regarded as the original Aperitivo Americano, and has been made continuously since 1891 using only natural ingredients. To aromatise the white wine a secret blend of herbs and spices, to name a few, gentian,  cinchona and bitter orange peels, are added to the wine base which is then steeped over a period of time.

    In recent years Cocchi Americano has become a cult product in the circle of best sommelier and bartenders of the world. The complexity of this product is the first thing that surprises you. On the nose you initially detect notes of orange zest, orange flower and elderflower before more mature aromas of baked apple and pear drops emerge. Your palate will immediately appreciate the bitter/sweet balance as more bitter notes mingle with honey and citrus flavors, mainly orange and lemon zest. More wine-like characteristics become evident as the flavors develop into a long, vibrant finish, with the bitter and sweet notes remaining fresh until the end.
    Serve chilled with ice, a twist of orange peel and a splash of soda.

    When Maidenii was conceived over a year ago, there was no Australian Vermouth on the market. Shaun and Gilles wanted to fill this niche to showcase Australia's unique native botanicals. Their Vermouth uses fresh wine to make a vibrant product distinct from others.

    The Sweet Vermouth is made by stoping the fermentation of cabernet grapes. Grapefruit, mace and angelica root all feature. Inspired by the classic Negroni, the Sweet is an ideal element for a white spirit cocktail, or perfect pairing for both soda and cider.

    Wonderful packaging aside, this is seriously brilliant to drink or mix. All Australian, very complex with herb, zest, spice and exotic botanicals aromas and flavours. It's got some great brine-meets-chalk texture too, kissed with a touch of glycerol sweetness. A must have. MIKE BENNIE

    Classic is red in colour with a much warmer spice range. It has loads more orange-peel flavour, again, cinnamon before cardamom and a sweet, almost strawberry, smell. It has a fuller mouth feel owing to more sugar, rich exotic elixir with a note of toffee. I also want this just on ice – maybe with some ginger beer thrown in. BEN KNIGHT, The Guardian

    The Apertif Vermouth uses fully fermented shiraz grapes. Prominent botanicals include orange zest, bay leaf and gentian root. This mix is designed to be savoured solo pre or post dinner, served over ice or chilled with a slice of orange. For a twist, it also works beautifully with Calvados.

    This is the first time Noval have declared their famous Nacional since 2003 so this is an exciting development. Very dark purple stains the inside of the glass.  Gosh, a massive bruiser of a wine. There is such concentration here that not much aroma can escape initially. Wild, peppery stuff. Then wonderfully juicy and spicy. This is like the ultimate biodynamic wine with lots of microbiology going on, in a good way.  Very clean and fresh on the finish.  Not notably sweet and with more marked acidity than some.  A big contrast to, for example, Fonseca 2011. This is all about subtle topnotes rather than broad lusciousness. So vital! JANCIS ROBINSON, 2013

    The 2011 Quinta do Noval Nacional has an entrancing bouquet that unfolds with time. It is extraordinarily concentrated with black currant pastilles, baked earth, a touch of terracotta and bay leaf that gains more dimension with time. Yet there is undeniable purity and elegance here, a seductive chorus of aromas perfectly in tune. The palate has a wondrous symmetry and focus, perfect acidity and immense purity. Everything here is so precise and at the same time, unassuming, as if this Nacional is aware of its breeding without the impulse to brag about it. It has closed down just a little since last year, but I take this as a positive sign that this legendary Nacional will delight for decades rather than years. This is the kind of elixir that leaves you speechless – surely the finest Nacional since the ethereal 1963. NEAL MARTIN, 2014

    The fruit is from 'la Choza' vineyard inside Pago Macharnudo, and classified as a palma.

    Deep gold with just a fringe of bronze. Salt caramel nose is brilliant with spicy dried Seville orange rind, and a great depth of real perfume, seductive rather than heady, really beautiful. Deeper and earthier again, pecans and rye toast, barley and lots of spicy cake-bakey goodness. Sweet and sour and really dynamic in the mouth, it's round and lifted, with barley water edged by chalk-starch and the whole thing open, vibrant and welcoming. TSA

    Throughout its history, the house of Cocchi has periodically produced alternative varieties of its Americano aperitif wine.  Here the wine base is a blend of two aromatic varietals such as Brachetto and Malvasia famous for imparting notes of wild rose and summer berries. These are blended with herbs, fruit and spices, most notably gentian, cinchona and citrus like for the Bianco classic version, but with an extra addition of Ginger and rose petals. Enjoy with soda or tonic and a zest of grapefruit. A Royale sumptuous edition can be made topping it with Sparkling Brachetto d’Acqui DOCG.

    Primitivo Quiles Vermouth Rojo 1L

    A style first made by the Greeks in the time of Hippocrates, and flavoured by the Italian herb of the same name Vermouth. Primitivo Quiles have made this wine since the 1920s. It's bottled at 15% alcohol, which is 3% natural from fermentation, and 12% of fortification. 9 degrees of potential alcohol are unfermented, realising 150g/l of residual sugar. The wine base is Moscatel, flavoured with aromatic natural herbs - wormwood, sage, fennel, ginger, cardamom, and clove. This version is called 'Rojo' as the use of the Arrope (cooked sweet must) gives the vermouth a reddish hue. The Arrope also contributes to the sweetness of the wine.

    Bittersweet, soft and gently herbal with kola bitterness and perfume at back after a nice soft fruit winey middle. There's some fruit succulence, some tannin chew, and a textural progress from stony, through nutty to bitters. Great served straight up on tons of ice with citrus slices.

    With six centuries of sherry production under their belts, Valdespino lay claim to being one of the oldest sherry bodegas in the region. The heart of Valdespino is their vineyards. One of the few bodegas to release single-vineyard wines, their Macharnudo holding is one of the grand crus of Jerez at the highest altitude and located on the famous, and sought-after bright white Albariza chalk soils.

    From their savory and fresh Manzanilla Deliciosa and Fino Inocente, to their unctuous and intense Solera 1842 and Pedro Ximenez wines, the quality is world class and the bodega still ferment a proportion of their wines in wood, adding layers of complexity to the finish product. One of the few estates that age in solera far in excess of the DO regulations for all their styles of sherry.

    This is outstanding value PX with rasins, Christmas spice, grilled walnut in a lovely rich yet fresh frame. Don't get us wrong, it's sweet and delicious but still comes of with some nice bright citrus peel and orange fruit. Yum!

    Planted at altitudes up to 400-metres located in the north of the island (Ponta Delgada and São Vincente), this late maturing grape is used to produce fruity, medium-dry styles. Considered a favourite amongst Madeira’s winemakers due to it’s ability to balance acidity, sugar and alcohol, at this level Verdelho produces a striking, off-dry wine that can also be served as an aperitif, with tapas dishes or more complex seafood dishes. With age, the wines grow in intensity, developing delicious honeyed depths and a creamy texture that is balanced by its racy acidity.

    For those of you who may remember we used to have 3 big barrels of fortified wines out the back of the store where you could re-fill your own bottles, or buy from us, a selection of Stanton & Kileen Muscat, Topaque and Ruby Fortified. After many years these bottlings fell out of favour and with room growing to a premium at the store we got rid of them.

    But what to do with all that wonderful sticky goodness? The juice was too good to just pour away and we really had a bit of a soft-spot in our heart for these wines. In jumps  crew at Stanton & Kileen help us out with our little conundrum. They expertly blended the 3 fortifieds together with a little fresh stock from their own holdings and worked a little magic at the same time. The result is the PWS Thank You Fortified.

    This is such a magical combo or red fruits blended with spicy muscat florals and a hint of earl grey tea. It's beautifully luscious and sweet like a muscat but a dollop of strawberry and raspberry fruit elevate the nose with a little twist on the traditional fortified. Delicious!

These are among the most demanding and challenging  styles of Port to produce requiring great skill and years of experience from the winemaker and blender. It is essential to strike the correct balance between the delicacy and elegance which results from prolonged cask ageing while retaining the  fruit quality which lends this old Tawny its structure and longevity.     I've been tasting a lot of port recently and on several occasions this particular wine has really stood out as being much more vigorous and satisfying than its peers.  It has that slight touch of rancio that comes from many years in wood but mainly it is a thoroughly delicious blend of fruit and nuts (no chocolate).  JANCIS ROBINSON, MW

    Deep burnt amber and olive on the rim; exceptionally luscious, intense and rich, its density more like very old Seppelt Paras, but with the unique topaque suite of flavours. Impossible to resist, although espresso coffee and walnuts would be a great match. JAMES HALLIDAY, The Wine Companion

    The NV 'Isabella' Rare Tokay offers a deep brown color with the slightest edge of green. The nose is complex with earthy loam and girolle aromas giving way to treacle, toasted hazelnuts and toffee. The palate is unbelievably sweet and viscous but there is also jaw-clenching acidity that perfectly balances that extreme unctuousness. Very long in the finish with layers of nut and spices really developing for those that can actually wait before taking another sip of this gorgeous nectar. These fortified wines are all bottled to drink now. The extended solera aging process has rendered them relatively stable to changes and they can be stored for a good number of years.     The non-vintage 15 Year-old Sercial offers more drive and fruit intensity on the nose than the 10 Year-Old, with vivacious aromas of dried honey, hazelnut and a touch of marmalade. The palate is medium-bodied with lemongrass driving the spicy entry.
