That’s why we started beekeeping with enthusiasm. Our happy bees prove that protecting biodiversity is possible and a duty we take on with pleasure. Laura Rizzotto, BalestriThe quote perfectly sums up Laura’s project. She is the latest custodian of a precious patchwork of organically farmed vineyards and olive groves in the heart of Soave. These culminate with an important holding in the tiny cru of Sengialta (‘Sengio’ in local dialect refers to basalt rock). Soils are dark and volcanic, vineyard exposures are southern and at altitudes ranging from 180 - 300m.
Laura and her partner Federico concentrate on low yields from Garganega and Trebbiano di Soave, with winemaking inspired by a respect for their precious terroir and heritage. This place gives the peak expression of native grapes Garganega & Trebbiano di Soave (the same DNA as Verdicchio from Le Marche). Laura makes some wonderfully contrasting wines: from ‘Libertate’, which is terracotta amphora raised Trebbiano di Soave, to ‘Vigneto Sengialta’, a cru bottling of old vine Garganega and Trebbiano di Soave aged on lees in 20 hectolitre ‘botti’. Balestri Valda’s wines are alive, textured and pure.
Beeswax, pear pulp, yellow florals set off a sense of richness, abundance and the fecundity of Spring. The palate follows suit hitting initially with a ripe orchard fruit bowl creating texture and richness before the limestone cinches the corset and draw the wine back to the centre. This sense of restraint V abundance is further accentuated by a lovely almond clip on the back end. I can see this with anything from soft cheese to scampi. Gorgeous wine. For the uninitiated, Vermouth is a wine based fortified aperitif typically having elements of herb, spice, citrus and bitterness. Most often the wine plays second fiddle to the recipe but with Cinq a Sept it shares equal billing. Expect fresh raspberry fruit laced with refreshing herbs, exotic spice and mild bitterness. I am totally in love with this product! Why? Because its flippin delicious! Pinot Based vermouth from the man behind Allies David 'Chappy' Chappman. He has just nailed it with this bright, bitter, summery drink. The subtle sweetness is beautifully balanced against the bitter citrus notes and the whole thing just sings. Domaine Vacheron is one of Sancerre’s elite properties, producing both white and red Sancerre wines of amazing purity and definition. The domaine has been completely transformed over to biodynamic farming with two young cousins, Jean-Laurent and Jean-Dominique Vacheron, at the helm. No synthetic material is used in the vineyard, harvests are carried out exclusively by hand, and the only fertilizer used is produced from the compost pile. Yields are kept extremely low. Having inherited some of the most coveted parcels in the appellation, the cousins are trying a Burgundian approach to Sancerre winemaking, with parcels being vinified .
Flinty sparks mix with fresh thyme and grapefruit pith aromas. The pure core of fruit cascades like a waterfall onto the palate, it’s luminous and palate staining while a minerally vein reminds you of its chalky and fossil laden soils it shares with Chablis.
