Paolo Vidopivec Vitovska Classica 2017Paolo Vodopivec works only with the Vitovska grape, which is native to the area bordering Slovenia and just north of Trieste. He likes to use ancient winemaking techniques, including amphorae and works with bio-dynamically grown grapes.
This is from a 260m vineyards with the crushed and de-stemmed grapes spending 6 months in contact with the wine in Georgian anfora. Its then matured in large Slovenian oak case for approx. 24 months before bottling without any fining or filtration.

Vodopivec Vitovska Classika 2019Paolo Vodopivec, his winery and six hectares of densely planted Vitovska are located in Carso, a plateau of shear limestone tucked between the border of Slovenia and the Adriatic Sea. Vodopivec was inspired by Josko Gravner. Like him, Vodopivec ages most of his wines in subterranean Georgian Amphora, followed by refinement in large neutral oak and a long stay in bottle before release. The results must be tasted to be believed. These are some of the top white wines being made in the world today, like cool-mountain air and liquid stone encapsulated in a bottle, yet with rich textural complexities that boggle the mind.
Crushed rocks and dried flowers give way to peach skins and chamomile as the 2019 Vitovska blossoms in the glass. This is pure and lifted in style, graceful and finessed, quickly gaining a salty tension as young pit fruits and lemon nuances mingle. A salty flourish and flinty sensation come forward through the finale, adding a savory flair as the 2019 finishes with lasting concentration. Guimaro Pombeiras Single Vineyard Mencia 2020This is from a plot planted with the classical field blend found in the old vineyards, mainly Mencía with a myriad of other varieties-Caíño, Sousón, Brancellao, Merenzao, Negreda, Garnacha, Mouratón... The full clusters fermented with indigenous yeasts, and the wine matured in 225- and 500-liter oak barrels for one year. This is explosive with a baroque, exotic and decadent nose redolent of flowers, soy sauce, violet pastille, spices and herbs. It's a little spirity (it's 14.2% alcohol), which probably adds to the showy profile. This gold-flecked, amber-colored Hungarian sweet wine is made from 100% Furmint grapes harvested from the Kapi Vineyard. It has aromas of ripe peach, honeysuckle, white flowers and pear.
