Paolo Vidopivec Vitovska Classica 2017Paolo Vodopivec works only with the Vitovska grape, which is native to the area bordering Slovenia and just north of Trieste. He likes to use ancient winemaking techniques, including amphorae and works with bio-dynamically grown grapes.
This is from a 260m vineyards with the crushed and de-stemmed grapes spending 6 months in contact with the wine in Georgian anfora. Its then matured in large Slovenian oak case for approx. 24 months before bottling without any fining or filtration.

Vodopivec Vitovska Classika 2019Paolo Vodopivec, his winery and six hectares of densely planted Vitovska are located in Carso, a plateau of shear limestone tucked between the border of Slovenia and the Adriatic Sea. Vodopivec was inspired by Josko Gravner. Like him, Vodopivec ages most of his wines in subterranean Georgian Amphora, followed by refinement in large neutral oak and a long stay in bottle before release. The results must be tasted to be believed. These are some of the top white wines being made in the world today, like cool-mountain air and liquid stone encapsulated in a bottle, yet with rich textural complexities that boggle the mind.
Crushed rocks and dried flowers give way to peach skins and chamomile as the 2019 Vitovska blossoms in the glass. NOSE
Broad and medium-weight with citrus peels, ginger snap biscuits. Sweet and with great depth. Apricot aromas develop then drift towards fruit salad. After a short time the wood come to the fore and water helps to release baked fruit.
PALATE
A complicated palate where the initial nose would lead you to expect plump fruits, what you get is a surprisingly dry element. The palate fleshes out as the first impact of the nose fades. Adding water brings out the caramelised elements balanced with the wood elements expected of a 15 year old.

The Chateau Suduiraut has a comparatively rich, botrytized bouquet with dried honey, pineapple and a touch of Seville orange marmalade, with exquisite definition and focus. The palate is well-balanced, with a viscous texture and a good level of botrytis, demonstrating fine minerality and tautness. Dried mango, quince and spice all interlace the focused finish, which is long in the mouth. Tasted against its peers, this has a higher level of intensity and focus. The 1988 Marsala Vergine Riserva mixes amber with red hues, lifting up dusty and savory with notes of cave-aged gouda, quince, baked apple and clove. With time in the glass, it gains in volume, evolving to show rich dark chocolates and dried roses. There are depths of texture here, yet it's wonderfully balanced by vibrant acidity as salted caramel and exotic spices wash across the palate, leaving a coating of mineral-drenched orchard fruits under an air of burnt sugar and tobacco. The experience goes on and on, as minutes can go by, and you're still not just tasting but feeling the 1988's glycerol heft lingering incredibly long. The result has been an incredible selection of complex and aromatic off-dry wines, reflecting the reputation Antoine Gerbelle bestowed on the domaine as “the Romanee Conti of the South-West France”.What makes these wines so sought after is the combination of three unique aspects. First, its location. With only 1.85 hectares Clos Joliette sits at 300m altitude, on the slopes of the hill of Beauvallon (Commune of Jurancon). The vines were planted in 1929 by Madame Migné and exposed to the East and South-East in a natural amphitheater, allowing the grapes to capture the gentle morning sun, rather than afternoon heat.
