For the uninitiated, Vermouth is a wine based fortified aperitif typically having elements of herb, spice, citrus and bitterness. Antarès is the main star of the constellation of Scorpio. One of the basic principles of biodynamics is to work in harmony with cosmic rhythms. Antarès is a selection of vines located on hillsides facing North, at the Western end of the Lirac appellation, at an altitude of 160m. The vines are 50 years old. The harvest is fully de-stemmed. Each variety is vinified separately using natural yeasts. The Grenache is aged in cement vats, the Mourvèdre in old French oak demi-muids for 12 months.

As always, this estate crafted one of the most perfumed and complex rosé wines in France. The 2023 Bandol Rose exhales aromas of spring flowers, guava, lemon, spices and iodine mingled with delicate licorice hints. Medium-bodied, textural and layered, it’s perfectly balanced with a fleshy core of fruit and bright acids, concluding with a long, mineral and iodine-inflected finish. Kudos! YOHAN CASTAINGWonderfully perfumed, the 2023 Rosé entices with orange oil, nectarines, crushed wild berries and savory herbs. Rich and broad yet with a stimulating core of acidity, this plays a game of contrasts on the palate, mixing citrus-laced green melon with zesty spice and crisp mineral tones. A cascade of rosy inner florals fills the senses, as a resonance of white peach and a zest of lime keep the mouth salivating. Glorious today yet also gently tannic, the 2023 is a showstopper. Paolo Vidopivec Vitovska Classica 2017Paolo Vodopivec works only with the Vitovska grape, which is native to the area bordering Slovenia and just north of Trieste. He likes to use ancient winemaking techniques, including amphorae and works with bio-dynamically grown grapes.
This is from a 260m vineyards with the crushed and de-stemmed grapes spending 6 months in contact with the wine in Georgian anfora. Its then matured in large Slovenian oak case for approx. 24 months before bottling without any fining or filtration.

Vodopivec Vitovska Classika 2019Paolo Vodopivec, his winery and six hectares of densely planted Vitovska are located in Carso, a plateau of shear limestone tucked between the border of Slovenia and the Adriatic Sea. Vodopivec was inspired by Josko Gravner. Like him, Vodopivec ages most of his wines in subterranean Georgian Amphora, followed by refinement in large neutral oak and a long stay in bottle before release. Poli Negroni packPoli are best known for there fine range of premium Grappa, liquers and distillates from North east Italy. Established in 1898 this quality producer has over a 100 years' experience with distilling. Recently they have produced a unique Gin - MARCONI 46. Artisanaly distilled and obtained from a unique infusion of juniper berries, muscat grape, mountain pine, cembra pine, mint, cardamom and coriander reminding of the Asiago plateau in the north of the Veneto region, where the Poli family comes from. Together this forms once of the world great classic cocktail- the Negroni.
This classic was first created for Count Camillo Negroni in 1919 at Florence's Café Casoni. A century later and millions of Negroinis, and this has sealed itself as one of the world's greatest classics. Below is the deceptively simple and delicious cocktail. We have included 2 bottles each of the Turin Bitters and the Drapo Rosso Vermouth so once you have gone through your first bottle of Marconi 46 all you have to do is grab another bottle or choose any one of your favourite local or international gins.

First, its location. With only 1.85 hectares Clos Joliette sits at 300m altitude, on the slopes of the hill of Beauvallon (Commune of Jurancon). The vines were planted in 1929 by Madame Migné and exposed to the East and South-East in a natural amphitheater, allowing the grapes to capture the gentle morning sun, rather than afternoon heat.
Second, an atypical terroir made of clay-silica, pudding stones, Ponto-Pliocene pebbles and crossed through by a vein of iron.
