Flinty sparks mix with fresh thyme and grapefruit pith aromas. The pure core of fruit cascades like a waterfall onto the palate, it’s luminous and palate staining while a minerally vein reminds you of its chalky and fossil laden soils it shares with Chablis. It starts subdued, with hints of pear, honeysuckle, lanolin and quince. With air it expands, building depth and breadth, showing notes of honey, lemon and jasmine. On the palate, it's both taut and well rounded, savoury and subtly pithy, but also spicy and gently viscous. It's a fabulous food wine that manages to complement both delicate and more fully flavoured dishes and, unusually, satisfies both white and red wine drinkers. Paolo Vidopivec Vitovska Classica 2017Paolo Vodopivec works only with the Vitovska grape, which is native to the area bordering Slovenia and just north of Trieste. He likes to use ancient winemaking techniques, including amphorae and works with bio-dynamically grown grapes.
This is from a 260m vineyards with the crushed and de-stemmed grapes spending 6 months in contact with the wine in Georgian anfora. Its then matured in large Slovenian oak case for approx. 24 months before bottling without any fining or filtration.
