We have long loved the wines of Damien Pinon and when we first tried this little number we were pretty stoked. Great sparkling Loire is such a treat. It captures all that zingy, racy, pure goodness of chenin blanc while bringing the added dimension of bubbles into the equation. They seem like a perfect partnership and we absolutely love this wine.
Quince and granny smith, talcum powder, quartyz spice and a gently honeysuckle, floral element that floats deliciously around in the background. Its pure and precise but fills out across the palate with each sip. Sometimes, Loire Sparkling is a little too lean but this deliver plenty of fruit at the same time to balance of the fine, minerally acidity.

Rochers des Violettes Touche Mitaine 2021The Touche Mitaine parcel features Chenin Blanc vines aged 35 years, planted on clay and flint soils. It was vinified in used oak barrels of 228 litres, with an élevage lasting twelve months. Aromatically this is rich in powdered chalk, with layers of white peach and a fragrant, lifted, minty freshness. The palate matches this style, in a gently composed structure, polished and fresh, with the same minty, white peach substance. It is framed by firm acidity, which I find typifies the vintage. This Sake is made with 100% local rice from their contracted rice farmers. Delicate citrus tones on the nose, clean and light texture and Umami from the rice, fully flavoured with fresh grape fruitiness.
‘Karakuchi’ means dry and crisp, and this Sake has a beautifully dry, crisp and clean finish.

Disznoko Late Harvest Furmint 2020 500mlLászló Mészáros makes this late-harvest wine from mainly botrytised Furmint grapes (along with small amounts of Zéta and Hárslevelu), which have shrivelled to around half of their original volume. Termed Késói Szüretelésú in Hungarian, there is no berry-by-berry selection here as there is for Aszú wines. Instead, selected botrytised bunches and grape clusters were harvested and macerated briefly before being pressed. The wine was racked into used French oak (including barrels from Disznóko's sister property, Château Suduiraut in Sauternes), where it matured for six months.
The short aging has kept Furmint's pungent and fruity aromas and flavours intact and guarded its energy and freshness. The palate has a fine balance of candied fruit, honeycomb sweetness and acacia. This wine has residual sugar of around 130 g/L, which is well-balanced by punchy acidity and gentle grip, giving a vibrant and modern expression of Tokaji.
The balance and freshness mean you don't necessarily have to serve this with dessert. In fact, in Hungary, this kind of wine is often consumed as an aperitif or with goat’s cheese or pâté on toast.

Yomogi Kabosu Oka Brand Japanese Bermutto (Vermouth) 720ml
Oka Kura is Junmai sake based, aromatized with four unique Japanese botanicals, and fortified with shochu. It is produced in Kumamoto, Japan, at the Tsutsumi Distillery. Oka Kura has a medium-light body with a round mouthfeel provided by the sake. You can very clearly taste the rice, yeast, yuzu, wormwood, and sansho. The combination of yuzu and yomogi creates a strong grapefruit backbone that dominates the palate beginning to end.
Oka Kura Bermutto is a uniquely Japanese take on the category of vermouth made from aromatised, shochu-fortified sake. Technically it's not a vermouth because it is not wine-based, but it works in cocktails as a vermouth should—as a botanically-infusing, low ABV modifier— that bridges a gap between sake, shochu, and vermouth.

Fukuju Junmai 720ml
The name Fukuju is derived from one of the Seven Lucky Gods in Japanese mythology. Fukuju is a relatively small brewery, making artisan and craft sake. Current owner Yasafuku San is 13th generation.
The house style is very elegant. The water in Nada/Kobe is called Miyamizu, and it is hard water by Japanese standards, full of minerals and is famous water in the ‘sake world’. Nada regional style is dry and has good grip with spiciness.
Water’s influence is very significant in Sake style, and Fukuju use this Miyamizu as well as blending pure water (filtered soft water) to make particular style of Sake. They take ‘water’ seriously in making and developing new way of Sake making.Fukuju is traditional with a modern approach at the same time. Since the large earthquake in this area in 1995, they built their brewery which is Seismic structure, and are progressing to create ecofriendly and sustainable way of Sake making.
The water in Nada/Kobe is called Miyamizu and is famous because it's full of minerals. Fukuju Junmai Sake is dry and has good grip with spiciness.

But you'll need patience, these powerhouses need around a decade to start revealing their inherent complexities.
Le Haut Lieu is the original vineyard, purchased by founder Gaston Huet in 1928. It's based on heavy clay and chalk in the topsoil means these wines tend to be the most approachable in youth, though they age beautifully.
The 2022 Le Haut-Lieu Sec is a lithe, reductive style with floral character and talcum powder. Full of phenolic, lip-smacking texture woven through its core, lending a sense of satisfying grunt to this dry yet balanced style. Dewazakura Dewa Sansan Junmai Ginjo Sake 720mlDewazakura spent 11 years developing their own original rice, called Dewa Sansan, and it is grown only in the Yamagata prefecture.
