Fukuju Junmai 720ml
The name Fukuju is derived from one of the Seven Lucky Gods in Japanese mythology. Fukuju is a relatively small brewery, making artisan and craft sake. Current owner Yasafuku San is 13th generation.
The house style is very elegant. The water in Nada/Kobe is called Miyamizu, and it is hard water by Japanese standards, full of minerals and is famous water in the ‘sake world’. Nada regional style is dry and has good grip with spiciness.
Water’s influence is very significant in Sake style, and Fukuju use this Miyamizu as well as blending pure water (filtered soft water) to make particular style of Sake. They take ‘water’ seriously in making and developing new way of Sake making.Fukuju is traditional with a modern approach at the same time. Since the large earthquake in this area in 1995, they built their brewery which is Seismic structure, and are progressing to create ecofriendly and sustainable way of Sake making.
The water in Nada/Kobe is called Miyamizu and is famous because it's full of minerals. Fukuju Junmai Sake is dry and has good grip with spiciness.

Diamantakos Xinomavro 2020A wine of pale ruby colour, medium aromatic intensity. On the nose, it delivers red fruit dominated by red cherry, raspberry, cranberry, and red plums; black fruit mainly bramble, damson, black cherries, and black plums; herbaceous aromas, such as tomato leaf, tomato paste, olives; spice such as allspice. Fruit is enveloped in restrained oak influence giving aromas of vanilla, cream, and butterscotch.
On the palate, the wine is dry, with medium + acidity, medium body, framed by fine-grained medium + tannins, firm but suave versus red, black fruit extract, a layer of botanical flavours and medium alcohol. It displays medium intensity of flavours but persistent and vibrant finish. Its tannins and acidity levels are balanced versus fruit and alcohol integration; a clean, elegant easygoing start on the palate but followed with layers of complexity, juiciness and characteristic herbs. Dewazakura Dewa Sansan Junmai Ginjo Sake 720mlDewazakura spent 11 years developing their own original rice, called Dewa Sansan, and it is grown only in the Yamagata prefecture. This rice makes a very soft and deep flavoured style of sake. It shows characters that resemble wine and has hints of herbs, yeast, and mushrooms. 4 Kilos Motor Callet 2021The most impressive 2021 Motor Callet was produced with 70% Callet and 30% Fogoneu at only 12% alcohol and with mellow acidity and lovely fragility. This comes from younger vines (15 years old on average) on red soils. It fermented with indigenous yeasts in 225-liter tinajas and a brick vat, all built with red clay from Mallorca. It matured in the brick vat for some three months, and no sulfur was added to the wine at any point of its fermentation, élevage or bottling. It's young, perfumed, expressive and captivating, with intense floral aromas, great purity and elegance. The palate is light to medium-bodied with flavors of acid berries and a piquant finish. 10,000 bottles were produced. It was bottled in March 2022. 4 Kilos 'Motor' Callet 20204 Kilos, the project created by Francesc Grimalt and Sergio Caballero as a scion of Ànima Negra in Mallorca in 2006 is the quality leader of the island. They have around 15 hectares of vineyards on the island, and many of the vines grow in what is locally known as "call vermell" soil (ferrous red clay with limestone and small to medium-size rocks). 2019 was a ripe and low-yielding vintage that delivered concentrated wines, while 2018 was more balanced and typically Mediterranean. 2019 was quite concentrated, a year with a lot of color and powerful wines. 2018 was much cooler, and the wines are fresher and transparent. Domaine Vacheron is one of Sancerre’s elite properties, producing both white and red Sancerre wines of amazing purity and definition. The domaine has been completely transformed over to biodynamic farming with two young cousins, Jean-Laurent and Jean-Dominique Vacheron, at the helm. No synthetic material is used in the vineyard, harvests are carried out exclusively by hand, and the only fertilizer used is produced from the compost pile. Yields are kept extremely low. Having inherited some of the most coveted parcels in the appellation, the cousins are trying a Burgundian approach to Sancerre winemaking, with parcels being vinified .
Flinty sparks mix with fresh thyme and grapefruit pith aromas. The pure core of fruit cascades like a waterfall onto the palate, it’s luminous and palate staining while a minerally vein reminds you of its chalky and fossil laden soils it shares with Chablis. Organically grown on a 10 hectare plot of degraded granite (Montsant’s only gravel patch), Dido has been in production since 2005. The blend is 86% co-fermented Garnatxa-Syrah (1/5 is Syrah, which helps the local Garnatxa ferment better), with 7% each Cabernet and Merlot. It’s picked early, and needs to be largely de-stemmed, so the fermentation takes place in two parts. A 15% portion is used as a starter – whole bunches take wild yeast and are covered with sulphur for 8 days. This is then released into the balance of the fruit, de-stemmed and un-sulphured, and away we go. After fermentation in old hogsheads, the wines are long-aged, more than 18 months – a first year in large raw concrete and then a further 6 months or so in large Foudre of 5000 litres.Bright and fresh red cherry fruit marked by mint and other local herbs, the wine shows the clear crunch of granite soil. Juicy and direct with macerated herbs, licorice and briar in lovely pastille fruit. Good concentration, rich-but-not-sweet country wine, it's all briar-herb-cane-brambly, with a nice little nudge of spice, allspice husk and leather in the soft savoury juice and a touch of chocolate in the soft leathery tannin. Clear and direct, with absolutely no wine-making clutter, it is delicately structured and savoury. A smasher!

Nossa Calcário Baga 2021100% Baga – Chalky clay mid-slopes with eastern orientation to the sun and a very intense Atlantic influence (only 15 km from the ocean). For this wine the grapes come from different small plots of Pato’s oldest vineyards (80 –130 years). These 3 centenary vineyards were purchased already some years ago and are fully converted to biodynamics.
The bunches are handpicked and hand-selected from the centenary vineyards in Bairrada (3 to 4 bunches/vine). Partly de-stemmed, fermented in open oak lagares with some extraction (pigeage). After the fermentation the wine is aged in 500 –600 used pipes and tonel (big cask) for 18 months. Prior to release, the wine further aged in bottle for 2 months.
