Dark Matter Spiced Rum (700ml)This is far from your average Rum. Firstly, it is Scotland's first and only Rum, made in a purpose built distillery in Banchory, between the Cairngorms and Aberdeen. Two brothers, Jim and John Ewan are behind the project and brought in Cory Mason - ex-Rum distiller at New York State's Berkshire Mountain Distillers (to name one of his many exploits) - to help them set things up. The result is a remarkable spiced rum made with only the finest, fresh ingredients and an attention to detail that the big boys can only dream about.
Dark Matter's infusion takes in a swathe of hand sliced fresh ginger, fresh green peppercorns (plucked by hand from their stalks), hand crushed, allspice berries, and Indian long pepper (a close relative of black pepper with a similar but spicier personality). Finally, to impart the ideal balance of sweet and spice, 60 g/l molasses is added. It is from this latter addition, and the spice infusion, Dark Matter takes its colour - no caramel colour is added. The quality and freshness of the ingredients creates a huge whack of intense ginger and spice and the class of the molasses creates a texture and a class that is unique in this style of rum, in our experience.

Quinta da Muradella Gorvia Blanco 2018Vintages don't necessarily follow in chronological order here, so from the 2014 I tasted last year (which is just being released now!), we jump to the 2018 Gorvia Blanco. This plot had normal yields in 2018, as the development was quite early and the fruit setting was before the problems showed up. This is the first year that has a little Godello, as Mateo replaced the dead vines and regrafted some rows with Godello, so it has a very small percentage (perhaps 5%). This is sharp, austere, mineral and incredibly young, and it finishes with a clean, sharp and precise salty note. This follows the textural direction of the Fisterra, or the wine he bottled for Matador. This should develop in bottle for a long time. He thinks 2014 is starting to show well now, almost six years after the harvest. I think this wine can be enjoyed young, but it will improve and develop a lot in bottle. This gold-flecked, amber-colored Hungarian sweet wine is made from 100% Furmint grapes harvested from the Kapi Vineyard. It has aromas of ripe peach, honeysuckle, white flowers and pear. In the mouth it is velvety smooth, with flavors of apricot preserves, honeycomb, peach and pear. Luscious sweetness is offset by bracing acidity, making this an elegant example of a Tokaji Aszu.
