Eric Bordelet approaches Cider-making with the same intensity as a passionate oenologist brings to winemaking. Bordelet worked as sommelier in the leading 3 star Parisian restaurant, ‘Arpege’ where he became deeply familiar with the top winemakers and wineries of France. In 1992 he took over the tiny patch of family farmed orchards in Charchigné, in the heart of Normandy’s premium Cider producing area. Since then he has set about rescuing the ancient ‘heirloom’ varieties of pears and apples that produce tiny quantities and amazing flavour.
Produced from pear trees estimated to be about 300 years old. Poiré Granit has 25-80 grams of sugar per liter, yet it doesn't taste particularly sweet. This is due to the tannin and acidity, which Bordelet says is twice as high as the apple! Stunning as aperitif or with cheese or desserts. With just 4% alc/vol this can be enjoyed any time. Mont Redon Lirac 2021(vat/casks) dark red; the nose has a salted tone, with a hint of violets and gently aromatic black fruit on the inside, a touch of charry oak. The palate serves comfortable content with a tasty centre, bonny juice in the fruit with a ripe level of tannin accompanying it. It’s a well organised, gourmand Lirac rouge, has southern virtues of round, textured appeal, the fruit lasting well. The oak on the finish needs to drop back, so leave until mid-2024. Yomogi Kabosu Oka Brand Japanese Bermutto (Vermouth) 720mlOka Kura is Junmai sake based, aromatized with four unique Japanese botanicals, and fortified with shochu. It is produced in Kumamoto, Japan, at the Tsutsumi Distillery. Oka Kura has a medium-light body with a round mouthfeel provided by the sake. You can very clearly taste the rice, yeast, yuzu, wormwood, and sansho. The combination of yuzu and yomogi creates a strong grapefruit backbone that dominates the palate beginning to end.
Oka Kura Bermutto is a uniquely Japanese take on the category of vermouth made from aromatised, shochu-fortified sake. Technically it's not a vermouth because it is not wine-based, but it works in cocktails as a vermouth should—as a botanically-infusing, low ABV modifier— that bridges a gap between sake, shochu, and vermouth.

Fukuju Junmai 720ml
The name Fukuju is derived from one of the Seven Lucky Gods in Japanese mythology. Fukuju is a relatively small brewery, making artisan and craft sake. Current owner Yasafuku San is 13th generation.
The house style is very elegant. The water in Nada/Kobe is called Miyamizu, and it is hard water by Japanese standards, full of minerals and is famous water in the ‘sake world’. Nada regional style is dry and has good grip with spiciness.
Water’s influence is very significant in Sake style, and Fukuju use this Miyamizu as well as blending pure water (filtered soft water) to make particular style of Sake. They take ‘water’ seriously in making and developing new way of Sake making.Fukuju is traditional with a modern approach at the same time. Since the large earthquake in this area in 1995, they built their brewery which is Seismic structure, and are progressing to create ecofriendly and sustainable way of Sake making.
The water in Nada/Kobe is called Miyamizu and is famous because it's full of minerals. Fukuju Junmai Sake is dry and has good grip with spiciness.

Notre-Dame-des-Pallières is a south facing site at about 200m, whilst Pallière et Pied-Gu is north-facing and at 300m. The fruit from Notre-Dame-des-Pallières is fully de-stemmed, that from Pallière et Pied-Gu fermented as whole bunches and each parcel is on skins for about 25 days. Malo is completed in tank and then 60% of each parcel is transferred to 228L barriques for 16 months, before blending and bottling.
Top notes of garrigue and spice overlay a deliciously voluminous palate of red forest berries. Too long a story to tell here, but the brief version is, I spent a good bit of time before our recent trip to the Rhone trying to find a producer that fit our wants and needs perfectly, we found three in the end. The Rhone is so exciting at the moment with so many great wines coming out, and many remain at reasonable prices. Still, in the face of this wave of excellent wine it is still rare to find someone crafting wines that are this extraordinary. Paul Formosa is one of the most talented and focused young winemakers I have come across in a long while. His wines are nothing short of spectacular.
Wonderful purity of expression, vivid, bright and clearly defined. Lighter in colour than you may expect, but that belies the deep wells of character that lurk amongst those soaring aromatics, dramatic fruit and the flashes of minerality that add to the overall feel of crispness that accompanies the luxurious and beautifully cushioned fruit. The wine goes on and on and with each moment another nuance or detail escapes from the depths and flicks or flutters along your mouth, tantalising you with the feeling of things to come.
Composed and self-assured, this is not a Gigondas that seeks to stun you with bold and forward fruit, rather it lures you in with its seductive flavours, its shapely profile and its enticing array of perfume. Sneaky structure pays second fiddle here, but it is all perfectly measured and ensures a very long and expressive life ahead. This was an easy choice for my wine of the year. ROSCOE
The promising 2022 Gigondas Cuvée Tradition 1871 mixes 80% Grenache with the remainder equally split between Syrah and Mourvèdre. Glossy red fruits mingle with dashes of dried herbs and a splash of rosewater. Refreshing acidity neatly balances the moderate fruit concentration, persisting all the way through to the sapid finish. Medium to full-bodied on the palate, this is never the biggest or richest wine in the vintage yet it oozes Provence character, is perfectly balanced, has great tannins, and is going to deliver the goods for upwards of two decades.
