Diamantakos Xinomavro 2020A wine of pale ruby colour, medium aromatic intensity. On the nose, it delivers red fruit dominated by red cherry, raspberry, cranberry, and red plums; black fruit mainly bramble, damson, black cherries, and black plums; herbaceous aromas, such as tomato leaf, tomato paste, olives; spice such as allspice. Fruit is enveloped in restrained oak influence giving aromas of vanilla, cream, and butterscotch.
On the palate, the wine is dry, with medium + acidity, medium body, framed by fine-grained medium + tannins, firm but suave versus red, black fruit extract, a layer of botanical flavours and medium alcohol. 4 Kilos Motor Callet 2021The most impressive 2021 Motor Callet was produced with 70% Callet and 30% Fogoneu at only 12% alcohol and with mellow acidity and lovely fragility. This comes from younger vines (15 years old on average) on red soils. It fermented with indigenous yeasts in 225-liter tinajas and a brick vat, all built with red clay from Mallorca. It matured in the brick vat for some three months, and no sulfur was added to the wine at any point of its fermentation, élevage or bottling. It's young, perfumed, expressive and captivating, with intense floral aromas, great purity and elegance. The palate is light to medium-bodied with flavors of acid berries and a piquant finish. 10,000 bottles were produced. It was bottled in March 2022. 4 Kilos 'Motor' Callet 20204 Kilos, the project created by Francesc Grimalt and Sergio Caballero as a scion of Ànima Negra in Mallorca in 2006 is the quality leader of the island. They have around 15 hectares of vineyards on the island, and many of the vines grow in what is locally known as "call vermell" soil (ferrous red clay with limestone and small to medium-size rocks). 2019 was a ripe and low-yielding vintage that delivered concentrated wines, while 2018 was more balanced and typically Mediterranean. 2019 was quite concentrated, a year with a lot of color and powerful wines. 2018 was much cooler, and the wines are fresher and transparent. In fact, 2018 seems like a superb vintage here, possibly the best they have produced to date. 2020 looks like a very good vintage, a year without much heat, wet and with some challenges and an early vintage. Domaine Vacheron is one of Sancerre’s elite properties, producing both white and red Sancerre wines of amazing purity and definition. The domaine has been completely transformed over to biodynamic farming with two young cousins, Jean-Laurent and Jean-Dominique Vacheron, at the helm. No synthetic material is used in the vineyard, harvests are carried out exclusively by hand, and the only fertilizer used is produced from the compost pile. Yields are kept extremely low. Having inherited some of the most coveted parcels in the appellation, the cousins are trying a Burgundian approach to Sancerre winemaking, with parcels being vinified .
Flinty sparks mix with fresh thyme and grapefruit pith aromas. The pure core of fruit cascades like a waterfall onto the palate, it’s luminous and palate staining while a minerally vein reminds you of its chalky and fossil laden soils it shares with Chablis. Organically grown on a 10 hectare plot of degraded granite (Montsant’s only gravel patch), Dido has been in production since 2005. The blend is 86% co-fermented Garnatxa-Syrah (1/5 is Syrah, which helps the local Garnatxa ferment better), with 7% each Cabernet and Merlot. It’s picked early, and needs to be largely de-stemmed, so the fermentation takes place in two parts. A 15% portion is used as a starter – whole bunches take wild yeast and are covered with sulphur for 8 days. This is then released into the balance of the fruit, de-stemmed and un-sulphured, and away we go. After fermentation in old hogsheads, the wines are long-aged, more than 18 months – a first year in large raw concrete and then a further 6 months or so in large Foudre of 5000 litres.Bright and fresh red cherry fruit marked by mint and other local herbs, the wine shows the clear crunch of granite soil. Juicy and direct with macerated herbs, licorice and briar in lovely pastille fruit. Good concentration, rich-but-not-sweet country wine, it's all briar-herb-cane-brambly, with a nice little nudge of spice, allspice husk and leather in the soft savoury juice and a touch of chocolate in the soft leathery tannin. Clear and direct, with absolutely no wine-making clutter, it is delicately structured and savoury. A smasher!

Dark Matter Spiced Rum (700ml)This is far from your average Rum. Firstly, it is Scotland's first and only Rum, made in a purpose built distillery in Banchory, between the Cairngorms and Aberdeen. Two brothers, Jim and John Ewan are behind the project and brought in Cory Mason - ex-Rum distiller at New York State's Berkshire Mountain Distillers (to name one of his many exploits) - to help them set things up. The result is a remarkable spiced rum made with only the finest, fresh ingredients and an attention to detail that the big boys can only dream about.
Dark Matter's infusion takes in a swathe of hand sliced fresh ginger, fresh green peppercorns (plucked by hand from their stalks), hand crushed, allspice berries, and Indian long pepper (a close relative of black pepper with a similar but spicier personality). Finally, to impart the ideal balance of sweet and spice, 60 g/l molasses is added. It is from this latter addition, and the spice infusion, Dark Matter takes its colour - no caramel colour is added. The quality and freshness of the ingredients creates a huge whack of intense ginger and spice and the class of the molasses creates a texture and a class that is unique in this style of rum, in our experience.

For this wine the grapes come from different small plots of Pato’s oldest vineyards (80 –130 years). These 3 centenary vineyards were purchased already some years ago and are fully converted to biodynamics.
The bunches are handpicked and hand-selected from the centenary vineyards in Bairrada (3 to 4 bunches/vine). Partly de-stemmed, fermented in open oak lagares with some extraction (pigeage). After the fermentation the wine is aged in 500 –600 used pipes and tonel (big cask) for 18 months. Prior to release, the wine further aged in bottle for 2 months.

Paolo Vidopivec Vitovska Classica 2017Paolo Vodopivec works only with the Vitovska grape, which is native to the area bordering Slovenia and just north of Trieste. He likes to use ancient winemaking techniques, including amphorae and works with bio-dynamically grown grapes.
This is from a 260m vineyards with the crushed and de-stemmed grapes spending 6 months in contact with the wine in Georgian anfora. Its then matured in large Slovenian oak case for approx. 24 months before bottling without any fining or filtration.
