Hay Shed Hill Block 2BLOCK 2 on the Hay Shed Hill vineyard was planted in 1975 to the Houghton clone of Cabernet Sauvignon. These old dry grown vines have sunk deep roots into the gravelly loam soil profile providing the nutrient basis they need. Block 2 has a steep northern facing aspect maximizing the sunlight interception by the vines providing ideal ripening conditions.
COLOUR: Dense dark red to black colour of great intensity.TASTING NOTES: Ripe berry aromas of great intensity with underlying dusty and earthy characters. There is depth to the nose indicating there are reserves of complex aromas yet to develop. Diamantakos Xinomavro 2020A wine of pale ruby colour, medium aromatic intensity. On the nose, it delivers red fruit dominated by red cherry, raspberry, cranberry, and red plums; black fruit mainly bramble, damson, black cherries, and black plums; herbaceous aromas, such as tomato leaf, tomato paste, olives; spice such as allspice. Fruit is enveloped in restrained oak influence giving aromas of vanilla, cream, and butterscotch.
On the palate, the wine is dry, with medium + acidity, medium body, framed by fine-grained medium + tannins, firm but suave versus red, black fruit extract, a layer of botanical flavours and medium alcohol. It displays medium intensity of flavours but persistent and vibrant finish. Its tannins and acidity levels are balanced versus fruit and alcohol integration; a clean, elegant easygoing start on the palate but followed with layers of complexity, juiciness and characteristic herbs. 4 Kilos Motor Callet 2021The most impressive 2021 Motor Callet was produced with 70% Callet and 30% Fogoneu at only 12% alcohol and with mellow acidity and lovely fragility. This comes from younger vines (15 years old on average) on red soils. It fermented with indigenous yeasts in 225-liter tinajas and a brick vat, all built with red clay from Mallorca. It matured in the brick vat for some three months, and no sulfur was added to the wine at any point of its fermentation, élevage or bottling. It's young, perfumed, expressive and captivating, with intense floral aromas, great purity and elegance. The palate is light to medium-bodied with flavors of acid berries and a piquant finish. 10,000 bottles were produced. It was bottled in March 2022. Victoria Ordonez Camarolos tinto 2018Wine has been part of Victoria Ordóñez’s life for as long as she can remember. Her father, José María Ordóñez, was a pioneer of the Spanish wine industry, distributing fine wines across the Province of Malaga since the ’50s. Although Victoria’s own professional career took off in a different direction – she studied to be a doctor and has a PhD in Medicine – in 2004 she decided to enter the wine business, initially combining it with her work as a health service administrator.
Victoria admits that she owes everything to the Austrian oenologist Alois Kracher, with whom she worked side by side making Málaga wines until his death in 2007. It was at this point that her career took a fresh turn as she decided to focus exclusively on what had become her passion – the world of wine.
Tasting: Bright red fruits, fennel, and other Mediterranean herbs, chocolate, and violet aromas. Maroon color and fine tannins lend a pleasing structure. Vibrant with red berries and spicy flavors, the wine is at once concentrated and fresh. Beautiful silkiness and great finesse with a very fresh finish.

4 Kilos 'Motor' Callet 20204 Kilos, the project created by Francesc Grimalt and Sergio Caballero as a scion of Ànima Negra in Mallorca in 2006 is the quality leader of the island. They have around 15 hectares of vineyards on the island, and many of the vines grow in what is locally known as "call vermell" soil (ferrous red clay with limestone and small to medium-size rocks). 2019 was a ripe and low-yielding vintage that delivered concentrated wines, while 2018 was more balanced and typically Mediterranean. 2019 was quite concentrated, a year with a lot of color and powerful wines. 2018 was much cooler, and the wines are fresher and transparent. Organically grown on a 10 hectare plot of degraded granite (Montsant’s only gravel patch), Dido has been in production since 2005. The blend is 86% co-fermented Garnatxa-Syrah (1/5 is Syrah, which helps the local Garnatxa ferment better), with 7% each Cabernet and Merlot. It’s picked early, and needs to be largely de-stemmed, so the fermentation takes place in two parts. A 15% portion is used as a starter – whole bunches take wild yeast and are covered with sulphur for 8 days. This is then released into the balance of the fruit, de-stemmed and un-sulphured, and away we go. After fermentation in old hogsheads, the wines are long-aged, more than 18 months – a first year in large raw concrete and then a further 6 months or so in large Foudre of 5000 litres.Bright and fresh red cherry fruit marked by mint and other local herbs, the wine shows the clear crunch of granite soil. Juicy and direct with macerated herbs, licorice and briar in lovely pastille fruit. Good concentration, rich-but-not-sweet country wine, it's all briar-herb-cane-brambly, with a nice little nudge of spice, allspice husk and leather in the soft savoury juice and a touch of chocolate in the soft leathery tannin. Clear and direct, with absolutely no wine-making clutter, it is delicately structured and savoury. A smasher!

The bunches are handpicked and hand-selected from the centenary vineyards in Bairrada (3 to 4 bunches/vine). Partly de-stemmed, fermented in open oak lagares with some extraction (pigeage). After the fermentation the wine is aged in 500 –600 used pipes and tonel (big cask) for 18 months. Prior to release, the wine further aged in bottle for 2 months.

Moss Wood Cabernet Sauvignon 2021One of Australia’s great cabernets. This from a cooler season highlights and accentuates the typical bright red fruits and blue fruit mix, especially on the nose. It’s aromatic and perfumed with an African violet scent. The palate as always is so exquisitely balanced and refined. Since 1989 the cabernet has been augmented with the floral bright fruit of cabernet franc and the darker robust black fruits of petit verdot. The palate delivers with a gentle restraint yet there is power deep within. The chalky tannins define a long and focussed finish. A deceptive medium bodied wine that will cellar for many years.
