A rich tawny colour with aromas of fruit cake, nuts, dried orange peel and citrus freshness. An initial figgy richness on the palate gives way to notes of fresh citrus, toasted almonds, walnuts and savoury umami notes. Finishes crisp and dry with a delicious salty tang. Zalto BalanceThe idea behind 'Balance' was to design a glass that would bring out the best in new-wave artisanal/low-intervention wines that emphasise texture and structure as much as fruit. Michael Hinterleitner, whose family owns Zalto, explains, "We have been testing different prototypes for two years to create a glass that harmonises certain aspects of wines not often found in conventional winemaking."
So, after two years of intensive tastings and discussions with winegrowers and sommeliers, 'Balance' was born. Zalto recommends the glass for deep, complex whites-Chardonnay and full-bodied Riesling, for example-to fully show their depth and subtlety while harmonising aromas and flavours without concentrating one element. They also recommend the glass for complex sparkling wines, skin-macerated whites and reds made with high proportions of bunches.

Domaine Vacheron is one of Sancerre’s elite properties, producing both white and red Sancerre wines of amazing purity and definition. The domaine has been completely transformed over to biodynamic farming with two young cousins, Jean-Laurent and Jean-Dominique Vacheron, at the helm. No synthetic material is used in the vineyard, harvests are carried out exclusively by hand, and the only fertilizer used is produced from the compost pile. Yields are kept extremely low. Having inherited some of the most coveted parcels in the appellation, the cousins are trying a Burgundian approach to Sancerre winemaking, with parcels being vinified .
Flinty sparks mix with fresh thyme and grapefruit pith aromas. The pure core of fruit cascades like a waterfall onto the palate, it’s luminous and palate staining while a minerally vein reminds you of its chalky and fossil laden soils it shares with Chablis. Full-bodied, viscous, and almost impenetrable, this dense, backward port is powerful and exceptionally long in the finish. Possibly the most masculine Fonseca I've ever encountered, it coats the taster's palate with licorice, jammy black fruits, and notes of chocolate that last for over a minute. Pereira D'Oliveiras Madeira Malvazia Sweet Frasqueira 1991For madeira to get the classification frasqueira, they are required to be aged a minimum of 20 years in barrel, and a further 2 in bottle. The variety used for this madeira as well is Malvazia, a white grape, usually used in sweeter styles of Madeira, due to higher acid and create balance in the finished sweet wine. This particular vintage was bottled in 2019 and released in 2021, with a total of 28 years cask aging.
Here's Crazy Mary-Jane! A big herbal hit on the nose takes away any possibility of candy over-sweetness. Caramel and grilled nuts run around in a complex of wood notes, and excellent freshness partners aged and developed secondary characters. Herbal-columbine, toffee-tobacco, sweet but smoky and caney.
