The hand-harvested fruit is dehydrated for 4-5 weeks and simply ground and pressed then settled for clarification before fermenting naturally, originating in tank and finishing in bottle. Bubbles develop within two weeks of bottling. It has lovely aromatics of graham and baked apple, followed by elegant bubbles and an off-dry profile on the palate.

Willie Smiths Heritage Blend Cider 750mlSituated on 115 acres, Wille Smiths is 30 minutes south of Hobart in the Huon Valley, a once thriving apple-growing region that exported apples all over the globe and earned Tasmania the title of the 'Apple Isle'.
Our farm went organic in 1997, thanks to the innovation of current orchardist, Andrew Smith. It was a bold move, transforming the orchard to organic, and involved a lot of new techniques and training to achieve. With a new focus on organic farming and the use of the apples in our cider, they hope to bring back the glory of the 'Apple Isle' days once more.
The cidery is located at the orchard, meaning the fruit travels the smallest distance possible from tree to bottle. It's a full circle process which all occurs in one place, right here on the farm.
Be in no doubt, this is one of the countries of not the worlds greatest ciders. Bold statement for sure but we think you will agree once you try it. This used to be called the French Blend but the various type of apples have moved it away from a predominantly French blend so they have changed the name. KT Watervale "5452" Riesling 2023What a delight from hello. It's a frisky, fruit-driven style, lots of character, lots of pleasure. More bandwidth than typical 'regional style riesling' with a thickset juiciness, some chalky pucker, depth to tropical fruits, citrus, green herbs. Nice course of briny minerality too. It turns the volume up a little on Clare riesling, and owns it in that way. It's delicious and full of character, is the message. Thank you. Aphelion Welkin Grenache 2023Sourced from a range of Vale sites, this is at the ‘vin de soif’ end of the Aphelion grenache roster. Grenache in this zone can be juicy and jubey, but not this. It’s a thread that runs through the Welkin range, with fruitful pleasure in a mid-weight zone tempered by savoury structure. Macerated strawberries and tart raspberries, redcurrant, red licorice, rhubarb and orange, pink peppercorn and a seasoning of dusty spice. Spinifex Papillon 2023Pete Schell's Papillon and I have had a thing going for a while. If I spy it on a wine list it's often what I'll go for as it consistently delivers a great drinking experience and matches a range of foods. This year it's 66/31/3% grenache/cinsault/counoise 3%. Spacious, sapid and energetic, it's all raspberries and cranberries daubed with exotic spice, rose petals, sour cherry, dried herbs and stone. Exopto Bozeto de Exopto Rioja 2023This wine has dropped the Bozeto styling and is now simply called Exopto. New name, same vibrant, great-value Rioja. This pan-regional expression of Rioja’s three principal grape varieties is conceived as a lively, easy-drinking introduction to the range. Most entry-level wines from this region are based on Tempranillo (a variety easier and more profitable to grow), yet here Garnacha represents 65% of the blend. This Garnacha hails from very old vines in the sandy, river-stone terroirs of El Agudo and Al Casillón at Alfaro (Rioja Oriental). The Tempranillo is drawn from a selection of mature vines in Ábalos (high-county Rioja Alta), and some Ábalos Graciano adds freshness and finesse.
The wine ferments in a combination of concrete and steel tank, then ages for six months in concrete and 5,000-litre oak vats. These days, Tom includes a measure of semi-carbonic maceration for extra buoyancy. Opening with perfumes of dusky berries and well-judged spice, this is a wonderfully aromatic, restaurant-friendly wine. It’s a wine that impresses with its precision rather than power. Even so, the warmer year gives an open, juicy wine and a great deal of drinking pleasure: spice, vibrancy and velvety flow flecked with notes of espresso, dried flowers and wild woody herbiness to go with its smoky blackberry fruit. If you’re looking for a bright, succulent grower Rioja, few will deliver better value than this.

Spinifex Grenache Gris 2023It’s a new plot of vineyard (on the estate) and this is the first year where there was enough crop to make/release a wine. It was fermented wild in old oak and then matured in a (not new) 1000l foudre.
Time in old oak was important here because it’s added texture to what is, at heart, a structural white wine. It’s a wine of skin and bones, stones and spices, its dryness a key part of its appeal. We’re almost into brine territory here, or stones sitting in a saline solution, perhaps. It knows what it wants, and it wants for food. Fermented over the course of three weeks – for a riesling – in a 10 degree room and then left to ferment (or to stop fermenting, naturally) over the course of another week, in a 1 degree room. Finished wine has 10 grams/litre residual.There’s decent intensity the the fruit flavour here but it’s mostly defined by its soft, fluid nature, and by the savoury-like notes about the edges. Yes there’s some fruit sweetness here too and it plays its role but it’s a long way from being a dominant factor, other than of course than contributing to the wine’s softness.
