Peach, lemon curd and a refreshing saline grapefruit acidity all in the mix along with a little nutty nuance. Zalto BalanceThe idea behind 'Balance' was to design a glass that would bring out the best in new-wave artisanal/low-intervention wines that emphasise texture and structure as much as fruit. Michael Hinterleitner, whose family owns Zalto, explains, "We have been testing different prototypes for two years to create a glass that harmonises certain aspects of wines not often found in conventional winemaking."
So, after two years of intensive tastings and discussions with winegrowers and sommeliers, 'Balance' was born. Zalto recommends the glass for deep, complex whites-Chardonnay and full-bodied Riesling, for example-to fully show their depth and subtlety while harmonising aromas and flavours without concentrating one element. They also recommend the glass for complex sparkling wines, skin-macerated whites and reds made with high proportions of bunches.

Domaine Vacheron is one of Sancerre’s elite properties, producing both white and red Sancerre wines of amazing purity and definition. The domaine has been completely transformed over to biodynamic farming with two young cousins, Jean-Laurent and Jean-Dominique Vacheron, at the helm. No synthetic material is used in the vineyard, harvests are carried out exclusively by hand, and the only fertilizer used is produced from the compost pile. Yields are kept extremely low. Having inherited some of the most coveted parcels in the appellation, the cousins are trying a Burgundian approach to Sancerre winemaking, with parcels being vinified .
Flinty sparks mix with fresh thyme and grapefruit pith aromas. The pure core of fruit cascades like a waterfall onto the palate, it’s luminous and palate staining while a minerally vein reminds you of its chalky and fossil laden soils it shares with Chablis. Domaine Barmes Buecher Sands Pinot Blanc 2021The vines for this 2021 Pinot Blanc Clos Sand were planted in 2013. It was first vinified as a single vineyard in 2018. This is a granitic site, at 400m of altitude, enclosed by forest, looking south-east. Matured in a mix of stainless steel and used 300-liter barrel, because there was not enough wine to fill a foudre , this spent 11 months on gross lees. The nose is shy, with mere suspicions of lemon. The palate is sylph-like but wonderfully juicy and rounded in its concentrated slenderness. It has the richness of yeast and strikes a beautiful balance.
