Rochers des Violettes Touche Mitaine 2021The Touche Mitaine parcel features Chenin Blanc vines aged 35 years, planted on clay and flint soils. It was vinified in used oak barrels of 228 litres, with an élevage lasting twelve months. Aromatically this is rich in powdered chalk, with layers of white peach and a fragrant, lifted, minty freshness. The palate matches this style, in a gently composed structure, polished and fresh, with the same minty, white peach substance. It is framed by firm acidity, which I find typifies the vintage. It’s complex and a wine of many layers. Raspberry and blackberry, plenty of perfume and spice, hazelnut, something in the way of dried herbs and earth. Medium-bodied, no shortage of red and black fruit, rose oil, but also something a little more meaty and savoury in the mix, with fresh acidity, kind of like pomegranate, fine emery board tannin grip, and a fine ‘minerally’ finish of excellent length. Huet Vouvray Le Haut Lieu Sec 2022 375mlDomaine Huet reigns supreme in Vouvray. They make some of the world's most pure dry wines and piquant sweet styles from the racy and multifaceted Chenin Blanc. But you'll need patience, these powerhouses need around a decade to start revealing their inherent complexities.
Le Haut Lieu is the original vineyard, purchased by founder Gaston Huet in 1928. It's based on heavy clay and chalk in the topsoil means these wines tend to be the most approachable in youth, though they age beautifully.
The 2022 Le Haut-Lieu Sec is a lithe, reductive style with floral character and talcum powder. Full of phenolic, lip-smacking texture woven through its core, lending a sense of satisfying grunt to this dry yet balanced style. Borderies is often the first vineyard to be harvested from slightly raisened fruit. Notes of jasmine, apple pie and crushed rocks on the nose lead into a subtle sweetness without heaviness. On the palate orchard fruits join in, signing off chalky minerality and a stream of quince-like phenolics which bring balance and punctuate the flow of sweetness. Antarès is the main star of the constellation of Scorpio. One of the basic principles of biodynamics is to work in harmony with cosmic rhythms. Antarès is a selection of vines located on hillsides facing North, at the Western end of the Lirac appellation, at an altitude of 160m. The vines are 50 years old. The harvest is fully de-stemmed. Each variety is vinified separately using natural yeasts. The Grenache is aged in cement vats, the Mourvèdre in old French oak demi-muids for 12 months.

Zalto BalanceThe idea behind 'Balance' was to design a glass that would bring out the best in new-wave artisanal/low-intervention wines that emphasise texture and structure as much as fruit. Michael Hinterleitner, whose family owns Zalto, explains, "We have been testing different prototypes for two years to create a glass that harmonises certain aspects of wines not often found in conventional winemaking."
So, after two years of intensive tastings and discussions with winegrowers and sommeliers, 'Balance' was born. Zalto recommends the glass for deep, complex whites-Chardonnay and full-bodied Riesling, for example-to fully show their depth and subtlety while harmonising aromas and flavours without concentrating one element. They also recommend the glass for complex sparkling wines, skin-macerated whites and reds made with high proportions of bunches.

It hands you memories of rain on earth, of bruised clover underneath the ripening grapes, of bees, blue skies, black skies, pink-blazed-morning skies, mist-draped dawns.
