The distillery is a relatively new operation headed by Bob Russell and sons, Matthew and Stephen. It is unique in several senses but first off it is housed in a Victorian-era pumphouse in the now derelict Chatham Dockyard south of London. The dockyard was at one time of huge importance to the Empire building ships for the Royal Navy from Napoleonic times through to the Falklands. The pumphouse # 5 was used to pump out water for the dry docks. Russell saw an opportunity to revitalise a magnificent piece of English architecture, give some locals a job and indulge his passion for making bespoke spirits. The processes used to make sapiir is a more traditional approach to and the methods used are centuries old, originating in the early distillation work developed across Europe and the Middle East around the 17th Century.
Books such as "the art of distillation" by John French, published in London in 1651, clearly outline many of the processes still used today to extract the delicate aromatic elements of botanicals used to give sapiir its unique flavour profiles.
Both the Gins and Sapir's are lovingly hand-crafted at their distillery and tasting room in Brunswick with each botanicals individually extracted and then finally blended to form the highest quality product. The range consists of the Hearts and Spades currently but watch out for more as these local heroes continue to grow.
THE NEGRONI
It was 1919, and Count Camillo Negroni decided his favourite cocktail the Americano needed a little something extra. He swapped out the soda water for gin and thus the Negroni was born. This classic aperitif may look like a sweet, Italian orange treat, but like a gate-crashing pack of weasels - it’s crafty, a little bitter and full of surprises.

Poli Negroni packPoli are best known for there fine range of premium Grappa, liquers and distillates from North east Italy. Established in 1898 this quality producer has over a 100 years' experience with distilling. Recently they have produced a unique Gin - MARCONI 46. Artisanaly distilled and obtained from a unique infusion of juniper berries, muscat grape, mountain pine, cembra pine, mint, cardamom and coriander reminding of the Asiago plateau in the north of the Veneto region, where the Poli family comes from. In addition to this month's Italian Mixed dozen we thought we would like to offer a Negroni pack featuring this incredible product. We have matched it with our very own Vermouths and Bitters from its western counterpart Turin Vermouth. Their philosophy is to maintain tradition through the production while sourcing aromats and herbs from all over the world and based on the local wines of the Piemonte's hills. Together this forms once of the world great classic cocktail- the Negroni.
This classic was first created for Count Camillo Negroni in 1919 at Florence's Café Casoni. A century later and millions of Negroinis, and this has sealed itself as one of the world's greatest classics. Below is the deceptively simple and delicious cocktail. We have included 2 bottles each of the Turin Bitters and the Drapo Rosso Vermouth so once you have gone through your first bottle of Marconi 46 all you have to do is grab another bottle or choose any one of your favourite local or international gins.

Pereira D'Oliveiras Madeira Malvazia Sweet Frasqueira 1991For madeira to get the classification frasqueira, they are required to be aged a minimum of 20 years in barrel, and a further 2 in bottle. The variety used for this madeira as well is Malvazia, a white grape, usually used in sweeter styles of Madeira, due to higher acid and create balance in the finished sweet wine. This particular vintage was bottled in 2019 and released in 2021, with a total of 28 years cask aging.
Here's Crazy Mary-Jane! A big herbal hit on the nose takes away any possibility of candy over-sweetness. Caramel and grilled nuts run around in a complex of wood notes, and excellent freshness partners aged and developed secondary characters. Herbal-columbine, toffee-tobacco, sweet but smoky and caney.
