William Fevre Chablis 2022FIVE STARS - To bottle in November. The average age is 40 year old vines, and 10% in wood. Excellent long finish. Sources are Chablis and Chichée for half and the rest in Viviers, 50 year old vines. Well drained steep slope which though south facing is at altitude and stays fresh. A fresh lemon yellow. The nose is a little more subdued than the Petit Chablis but more classical. This too has the attractive saline bitterness of extreme youth, but the fruit builds beautifully on the palate. TOP VALUE - There is slightly better Chablis typicity present on the aromas of mineral reduction, iodine and cool white fleshed fruit. There is also slightly better volume and richness to the delicious medium weight flavors that possess a lovely sense of underlying tension, all wrapped in a refreshing, clean, dry and sleek finale. This is very good for its level plus it should reward a few years of keeping if desired. BURGHOUND

Melbourne Gin Company Dry Gin 700mlFrank Moorhouse in his book Martini - a memoir states, "Every time it is served, the martini represents a journey towards an unattainably ideal drink". The idea of endlessly pursuing a perfection that does not exist is something well known to passionate winemakers. Having a winemaking background we thought we would delve into the mysteries of gin production. This was largely brought about by our fascination with martinis and all things gin.
The notion of the "unattainable ideal drink" led us into a series of trials and experiments and we have become fully immersed in the alchemy of batch distillation and the extraction of exotic and local botanicals. The MGC doffs its hat to London Dry Gin with the two major components being juniper berries and coriander seed. There are 11 botanicals in total (not including a lot of love) with the grapefruit peel and rosemary coming from the garden at Gembrook Hill Vineyard. The other botanicals are macadamia, sandalwood, honey lemon myrtle and organic navel orange, which are all sourced from Australia. The exotics in the mix are angelica root, orris root and cassia bark.Each botanical is distilled separately and then blended to our recipe - essentially a winemakers approach. We use a copper pot baine-marie alembic still. A still traditionally used for making perfume. This allows us to preserve the delicate nature of the botanicals we work with. The final component is the water used to break the gin back. We use Gembrook rainwater which is pure and fresh and allows the botanicals to shine through. At only 60kms from Melbourne this local source contributes to the definition of the unique "Melbourne Dry Gin" style.
The MGC is not chill filtered. We didn't want to take out the oils that contribute so much to the aromatics and mouth feel of the gin. So when the gin is very cold the oils become slightly insoluble and form a light haze. The French use the word louche to describe this. In a different context someone who is louche is of a shady character! Each bottle is numbered to reflect the small batches in which it is made. ANDREW MARKS, Distiller & Winemaker

McHenry Hohnen Calgardup Brook Vineyard Chardonnay 2019Rock salt, smoke and seaweed on rocks - a wine that smells of the sea. But, oh how it thrills and fills into its fruit on the palate. Hazelnuts, almond blossom, masses of chalk-lined lime; cold white apples, gold-skinned. Long-limbed, rangy, breathtakingly graceful. It has a saline sparsity, yet draws a crescent line through the mouth, filling every corner with a cool lunar glow and the promise of fulness to come. The 2019 vintage was cool in Margaret River, with no shortage of rain. For those producers that handled the vineyards with detail and agile responsiveness, the vintage was a resounding success. The 2019 Calgardup Brook Vineyard Chardonnay is minerally and layered with graphite and flint laced into the aromatics. In the mouth, the wine is taut and spicy, but it has expanse and shape through the mid-palate onward, too. Through the finish, there's a saline/nougat nutty character: almond skin and walnut. From two leui dits - Les Clous Perrons, les Magnys - in Meursault with time on lees in barrel to bring weight and texture with 12 months and 10% new oak. From vines 50+ and 25+ years old. Again those beautifully handled lees add something to both the feel of the wine and its aromatic profile. That is one of the hallmarks of these wines and its great to see at this level. Ample roundness and generosity, but there is zip and pep too. Salty minerality here! Very good Bourgogne. Better than its classification.

Zalto BalanceThe idea behind 'Balance' was to design a glass that would bring out the best in new-wave artisanal/low-intervention wines that emphasise texture and structure as much as fruit. Michael Hinterleitner, whose family owns Zalto, explains, "We have been testing different prototypes for two years to create a glass that harmonises certain aspects of wines not often found in conventional winemaking."
So, after two years of intensive tastings and discussions with winegrowers and sommeliers, 'Balance' was born. Zalto recommends the glass for deep, complex whites-Chardonnay and full-bodied Riesling, for example-to fully show their depth and subtlety while harmonising aromas and flavours without concentrating one element. They also recommend the glass for complex sparkling wines, skin-macerated whites and reds made with high proportions of bunches.

Alexis de Benoist Macon Villages 2021Golden colour. Deep and honeyed, grilled cashew and white flower aromatic. Fruit spectrum dances around the orchard and something slightly more exotic with a puff of white smoke putting a complexing note into the conversation. The palate follows suits with a lovely attack of sweet citrus and melon fruits spreading across the palate before a blast of limestone-linked austerity and tension pulls everything back into line. It's a wine I just loved drinking. you get Macon generosity and enjoyment alongside enough tension on the backend to keep you wanting another glass. This guys is a "watch-this-space" producer. Patrick Sullivan Woori Yallock Chardonnay 2024Medium-full yellow colour with a smoky struck-flint aroma overlying lemon/citrus fruit, a touch of oak spice, all in balance. Nectarine, cumquat jelly and rosewater, ginger and cinnamon, hazelnut, chamomile and mint, and while I’ve likely written some outlandish stuff here, in essence, it pretty much just smells and tastes like a very good Chardonnay. It has plenty of flavour, though it’s not heavy, hazelnut and salted pistachio, a subtle cultured butter character, a chalky and stony thing to texture, acidity is cool and fine, green mango and ripe lemon closes out a finish of excellent length. There is a sweet grassy/floral element with savoury coriander and juniper to the fore. The flavours ebb and flow on the palate gently pushing and pulling between savoury corriander/cassia bark and sweet vanilla.
