Victoria Ordonez Camarolos tinto 2018Wine has been part of Victoria Ordóñez’s life for as long as she can remember. Her father, José María Ordóñez, was a pioneer of the Spanish wine industry, distributing fine wines across the Province of Malaga since the ’50s. Although Victoria’s own professional career took off in a different direction – she studied to be a doctor and has a PhD in Medicine – in 2004 she decided to enter the wine business, initially combining it with her work as a health service administrator.
Victoria admits that she owes everything to the Austrian oenologist Alois Kracher, with whom she worked side by side making Málaga wines until his death in 2007. It was at this point that her career took a fresh turn as she decided to focus exclusively on what had become her passion – the world of wine.
Tasting: Bright red fruits, fennel, and other Mediterranean herbs, chocolate, and violet aromas. Maroon color and fine tannins lend a pleasing structure. MMAD Shiraz 2022If you’re lucky, and most of us aren’t, there comes a time in your life when it all comes together. I suspect that’s what’s happened with this Blewitt Springs vineyard, planted in the middle of the Second World War, and the collection of wine people behind MMAD, all of whom have weathered a lot of summers in a lot of places in the pursuit of wine excellence. This wine tastes of a lot of right decisions, and of a lot of time spent in the journey to them. It has texture, balance, flavour and all that, but as my mum would say, ‘any dumb bunny can do that’. More importantly, what this wine has is all the nods and winks. I once wrote, a long time ago, of a moment where union legend David Campese ran straight through a bunch of defenders without breaking stride, or altering course. He did something, something that couldn’t be seen, and made the impossible look effortless. So too here. It has degrees of silk, fruit enough, a spinnaker on the finish, a volume of nuance. Yeringberg Shiraz 2014Shiraz from one of Australia’s greatest estates. I thought we’d already reviewed this; not sure how it slipped through the net. Thankfully the ‘crowd-funding’ side of TWF audience kept us up to the task.
You name it, it’s here. This is the antithesis of a simple red. Every time you sip you find something different. It runs with redcurrant but from there come breakouts of meat, violets, black pepper, jellied liquorice, stems and mint. Tannin is grunty, almost grainy, with cloves and peppers studded through. The texture generally is quite silken but the wine as a whole does not go quietly, as indeed it shouldn’t. Beyond a certain price point we want more than mere fruit; the brief is met here. Dark Matter Spiced Rum (700ml)This is far from your average Rum. Firstly, it is Scotland's first and only Rum, made in a purpose built distillery in Banchory, between the Cairngorms and Aberdeen. Two brothers, Jim and John Ewan are behind the project and brought in Cory Mason - ex-Rum distiller at New York State's Berkshire Mountain Distillers (to name one of his many exploits) - to help them set things up. The result is a remarkable spiced rum made with only the finest, fresh ingredients and an attention to detail that the big boys can only dream about.
Dark Matter's infusion takes in a swathe of hand sliced fresh ginger, fresh green peppercorns (plucked by hand from their stalks), hand crushed, allspice berries, and Indian long pepper (a close relative of black pepper with a similar but spicier personality). Finally, to impart the ideal balance of sweet and spice, 60 g/l molasses is added. It is from this latter addition, and the spice infusion, Dark Matter takes its colour - no caramel colour is added. The quality and freshness of the ingredients creates a huge whack of intense ginger and spice and the class of the molasses creates a texture and a class that is unique in this style of rum, in our experience.
