Fukuju Junmai 720mlThe name Fukuju is derived from one of the Seven Lucky Gods in Japanese mythology. Fukuju is a relatively small brewery, making artisan and craft sake. Current owner Yasafuku San is 13th generation.
The house style is very elegant. The water in Nada/Kobe is called Miyamizu, and it is hard water by Japanese standards, full of minerals and is famous water in the ‘sake world’. Nada regional style is dry and has good grip with spiciness.
Water’s influence is very significant in Sake style, and Fukuju use this Miyamizu as well as blending pure water (filtered soft water) to make particular style of Sake. They take ‘water’ seriously in making and developing new way of Sake making.Fukuju is traditional with a modern approach at the same time. Since the large earthquake in this area in 1995, they built their brewery which is Seismic structure, and are progressing to create ecofriendly and sustainable way of Sake making.
The water in Nada/Kobe is called Miyamizu and is famous because it's full of minerals. Fukuju Junmai Sake is dry and has good grip with spiciness.

Lalu Langhe Nebbiolo 2021Organic. This vibrant, perfumed Nebbiolo equally blends two sites that were both planted by Lalù. The first site, Roncaglie in La Morra, is a plot of land that Lara Rocchetti and Luisa Sala bought in 2015 and planted in 2017. Looking towards Verduno, this parcel faces east at an altitude of 400 metres. It’s a cool, windy, slow-ripening site. The second source is Bussia Bovi, a sub-Cru within Monforte’s superstar Bussia MGA. Lalù’s parcel is located at 320 metres above sea level, in the south of Bussia, between Bricco San Pietro and the area historically known as Bussia Arnulfo. The soils here are rich in sand, gifting a perfumed wine with supple fruit and great delicacy—the yin to Roncaglie’s yang. The fruit from here fermented as whole bunches and was raised in concrete to retain as much fragrance as possible. Both vineyards could be classified as Barolo (when the vines are of age), which says a great deal about the quality on offer here.
This Langhe Nebbiolo delivers more than most. The 2021 is a juicy, pretty Nebbiolo brimming with vibrant red and dark cherry fruit, anise, florals and some wood spice. In the mouth, the typical austerity of young Langhe is traded for svelte, integrated tannins and supple texture, all supported by mouth-watering energy.

Dewazakura Dewa Sansan Junmai Ginjo Sake 720mlDewazakura spent 11 years developing their own original rice, called Dewa Sansan, and it is grown only in the Yamagata prefecture. Cavallotto Langhe Nebbiolo 2021Dark and earthy to open, new leather and walnuts, wafts of bergamot, spice and dried flowers. It’s full-bodied, deep in flavour, red and black fruits, kind of rustic, but in a pleasing way, not least in the tea and grainy tannin grip department. There’s a cinch of orange peel bitterness, with a long grated nutmeg and slightly rusty tannin finish. Really opens up after some air. Such character. A very serious Lange Neb! The word benchmark gets bandied around a lot, but this is a Nebbiolo that justifies that term from an already hyped vintage. This year’s wine is drawn exclusively from declassified, mostly young-vine fruit from the great Castiglione Falletto Cru of Bricco Boschis. Cropped at yields below 40 hl/ha, the grapes are entirely destemmed, and fermentation is spontaneous. Malolactic conversion was in cement tanks during the spring following harvest. I don't mean these varieties (merlot, cabernet franc, cabernet sauvignon) are new to the area, in fact the cabernet family have been planted up here for centuries, I mean the style of the wine blends classical cabernet production - modern vinification and small oak elevage - with a local fruit spectrum which offer something different to their spirit home in France.
Middle weight. Dark cherry. dark berry and leafy aromatic with a touch of earl grey tea. Palate is clean and pure, sweetly fruited but also lithe and direct. Dark chocolate and oak splice are woven into the core of the wine. It's a lovely example, the main feature for me being that it holds excellent ripeness but is also mid-weight and cool fruited.
