This may be one of the most senior wineries on the Mornington Peninsula, but that does not stop it moving with the times. It has embarked on a serious sustainability program that touches on all aspects of its operations. It is one of the few wineries in Australia to measure its carbon footprint in detail, using the officially recognised system of WFA; it is steadily reducing its consumption of electricity; it uses rainwater, collected from the winery roof, for rinsing and washing in the winery, as well as supplying the winery in general; it has created a balanced ecosystem in the vineyard by strategic planting of cover crops and reduction of sprays; and has reduced its need to irrigate. None of this has in any way impacted (other than beneficially) on the quality of its wines.
