There is history of innovation here with it being one of the first Domaines to practise estate bottling in the 1930s, and perhaps more significantly the Ponsots were among the first growers to understand the importance of clones and clonal selection - many of the most important Pinot Noir clones originate from their vineyards.

The average age of the vines across the Domaine is 50 years old and it is this, along with Laurent Ponsot's expertise, that give these wines their power, concentration, and rich, exotic and spicy nuances. JASPER MORRIS MW

Laurent Ponsot has a reputation as an innovator in Burgundy.  He was among the very first estates to move to domaine bottling in the 1930s and was one of the leading proponents of clonal selection in the region as well as continuing to make strides in alternative closures as well as traceability of wines. However, it is the quality of this five-star estate that is most important. Not only does he own one of the most comprehensive collections of grand cru vineyards but he makes some of the most idiosyncratic examples of these climats. The wines are 100% destemmed, allowed to ferment at their own rate with no temperature control or inoculation of any sort, but perhaps the most unusual winemaking decision here is that these wines see virtually no new wood and are raised in older barrels (up to ten years) and only when new barrels are needed to replace unusable ones is there any new oak.
