The wines of Perrot Minot, at their best, seem to marry what you would think would be an impossible combination of power and a seeming weightlessness. Here the key to their remarkable offerings lies in their very old vines, fantastic holdings and one of the more fanatical approaches to every facet of production seen in the region. There is never more than 50% new wood in any wine and often a fair bit less, instead the structure and power come from the tiny yields he restricts his vines to and the thick skins inherent in the fruit from these venerable old vines. Their remarkable longevity and subtle structure is perhaps more remarkable when you consider that no stems are ever kept here, instead a very soft whole berry maceration is undertaken.
