Castellare is an 80-hectare property just outside the village of Castellina which has been owned by Paolo Panerai since 1980. Under his stewardship and with the help of famed consultant oenologist, Maurizio Castelli, the estate has become one the foremost producers in the zone, and their wines (which include the famous I Sodi di San Nicolo) are justifiably sought after.  The accent here is to preserve the savoury, restrained aspects of traditional Chianti Classico while at the same time soften the tannins through fermentation and elevage, and enhance the depth of fruit characters through lower yields.
