Domaine Dupasquier in the appropriately-named hamlet of Aimavigne has long been viewed as the benchmark for Altesse from the Marestel slopes, which offer a panorama awesome in its own way even for someone familiar with far steeper sites in the Valais, lower Mosel, or Douro. Whole bunch grapes are pressed in small lots to preserve the whole fruits. Pneumatic pressed, fermentation is done in stainless steel tanks using natural indigenous yeasts. The wine is aged on fine lees in stainless steel for 11 months before being slightly filtered. Bottled in September.
Light and bright color, the wine is fresh, digestible and crispy. Notes of citrus fruits and grapefruits, beautiful minerality. Racy and fresh this will be perfect to quench the thirst after some crazy hill climbs. How do they do it?
